    Dubliner & Sun Dried Tomato Toasts

    I really like to have an afternoon snack and if I am home, I almost always do.  Most of the time I just eat whatever I can grab, but today I had part of a baguette just waiting to be  toasted.  I added Dubliner and a few sun dried tomatoes and a just a little fresh basil, it paired perfectly with green grapes for an all time best snack!  This would also make a great appetizer.  Great fresh out of the oven but still really tasty at room temperature.  The nutty flavor of the Dubliner with the sweet and tangy tomatoes really set my taste buds to singing.  I had a few and then in walks one of my teenagers and my snack was gone in about five seconds. I'm not sure he was even chewing, just inhaling!  As he headed out the door to check on some cattle, he proclaimed them the best thing ever.  He knows what I like to hear!

    Dubliner & Sun Dried Tomato Toasts

    Ingredients:

    6 thin slices of a baguette

    ½ garlic clove

    1 tablespoon butter, softened

    ⅓ cup Dubliner cheese, grated

    1 tablespoon sun dried tomatoes, diced

    2 fresh basil leaves

    Cooking Directions:

    Pre-heat oven to 400 degrees.  (I used my toaster oven, since this was a small batch.) Rub each baguette slice with garlic clove, spread with butter and lay on a baking sheet, butter side up.  Sprinkle with cheese and dot a few sun dried tomatoes on each slice.  Bake for about 5 to 7 minutes or until baguette starts to crisp and cheese has melted.  Remove from oven and garnish with basil leaves that have been torn into small pieces.  Serve with green grapes.

    *You can double this recipe.
