    Chocolate Chip Ice Cream Sandwiches & a Cookbook Giveaway

    Homemade Chocolate Chip Ice Cream Sandwiches

    I make desserts a lot, I think  you all realize that, but did you know that my family's favorite dessert is ice cream?  Sometimes I have some kind of super rich cheesecake sitting in the fridge and they want ice cream instead.  This is both good and bad.  Good because that means more cheesecake for me, bad, well you know, for the hips.  This dessert is the best of  both worlds, home baked cookies filled with ice cream.  Essentially the perfect summer dessert.  You can use store bought cookies here or home baked, what ever suits your fancy.  I've been dreaming up other variations since we gobbled these up last night.  Peanut butter cookies with chocolate ice cream, chocolate cookies with coffee ice cream, endless possibilities.

    This recipe came from 400 Best Sandwich Recipes by Alison Lewis, published by Robert Rose.   This is a comprehensive book filled with every kind of sandwich imaginable.  From breakfast and brunch sandwiches to grilled cheese, burgers, wraps, light and healthy, plus desserts and condiments.  The recipes are easily prepared and perfect for our busy lives.  Summertime is crazy busy on the ranch and we eat a lot of sandwiches.  When I was a cook on a large ranch I would make thirty sandwiches some days and often racked my brain for ways to add variety.  This cookbook is the answer.  I no longer have to make mass quantities of sandwiches but still appreciate all of the variety.  There are gorgeous photos of many of the sandwiches and easy to follow instructions, I love the layout of this cook book.

    Alison Lewis is a nationally known Recipe Developer, Tv and Social Media Spokesperson and Consultant, Mom Food Blogger, Food Educator, Food Photographer/Stylist, Nutritionist, and President of Ingredients, Inc., a Food Consulting company.  She is known for creating healthy, family-friendly recipes that are easy to prepare, and she offers great and entertaining ideas on her blog Ingredients, Inc.     Homemade Chocolate Chip Ice Cream Sandwiches

    Excerpted from 400 Best Sandwich Recipes by Alison Lewis © 2011 www.robertrose.ca

    Ingredients:

    2 cups vanilla ice cream

    16 chocolate chip cookies store bought or homemade

    I used this recipe from What Megan's Making (really good choice)

    Optional Toppings : sprinkles, chopped nuts, mini chocolate chips

    Directions:
    Let ice cream stand at room temperature for 10 minutes to soften.

    Place ¼ cup of ice cream on 8 cookies.  Place remaining cookies on top of ice cream, pressing gently to seal.  Roll edges in desired toppings.  Serve immediately or wrap in plastic wrap and freeze for up to 3 days.
