When my oldest son was in first grade, the teacher had the kids draw a picture and write a sentence about their Mom. She put all of the pictures into a book for the kids to read. My son wrote, “My mom eats leftover pie and watches movies.” So I reckon that establishes my love for pie. Other kids wrote about how hard their mom works and how she sings while she cleans house. Not my kid. Any way this is a super rich and yummy pie, not for the faint of heart when it comes to rich desserts. I think you’ll like it, love it….you know the routine.
Chocolate and Peanut Butter Pie
1 graham cracker crust
4 oz cream cheese, softened
1 cup powdered sugar
1/2 cup peanut butter
8 oz whipped topping, plus more for garnish if you choose
1/2 cup semi-sweet chocolate chips
2 tablespoons cream
5 peanut butter cups for garnish, optional
In a microwave safe bowl, melt chocolate chips and cream in 30 second intervals stirring in between. Spread onto bottom of pie crust. In a large mixing bowl beat cream cheese and peanut butter until well combined, add in powdered sugar and beat well. Fold in 8 oz of whipped topping. Pour into crust over chocolate layer. Cut peanut butter cups into eighths and place around pie for garnish with a little more whipped topping and half of another peanut butter cup, if you like. Chill for at least 6 hours.
