    Chicken-Artichoke French Bread

    Last weekend I ran to the local grocery store to pick up a few things and found that The Hunger Games was finally out on video.  I had been dying to see it, since it was at the theaters.  I just hardly ever make it to the theater.  I have been pestering my boys to read the series of books for over a year now with no luck.

    My niece and nephew were over that evening and I invited them to stay for the movie.  My niece and I were the only ones to have read the book.  The boys were begging to know what happens and we just kept telling them they should've read the books.  I loved the movie and thought it followed the book really well.

    You can't watch movies without snacks so I made a little guacamole and this Chicken-Artichoke French Bread.  I wasn't sure how the kids would like the artichokes, it isn't something we eat very often, but they all loved it.  I sliced it into thin slices but you could make a meal out of this by adding a salad on the side or even some fresh fruit.

    I can't believe it is already Friday again and this week is gone and so is the summer.  My big goal for the summer was to get grass growing in the yard.  Thanks to my husband we are getting there, it is starting to look like a yard.  Enjoy your weekend and if you haven't watched or READ The Hunger Games, do it! Do it! Oh, and make this bread too.  I'm feeling bossy today, I'll try to scale it back a little, but really it is for your own good.

     Chicken-Artichoke French Bread

    Inspired by The Pioneer Woman's Olive Cheese Bread

    Ingredients:

    • 1 loaf French Bread Sliced in half long-wise
    • ¼ cup butter, softened
    • ½ cup mayonnaise
    • ½ teaspoon granulated garlic
    • 1 teaspoon salt
    • 2 cups mozzarella cheese
    • 2 cups cooked, diced chicken
    • 1 9.5 oz jar artichokes (plain not marinated), drained and chopped
    • ⅓ cup toasted sliced almonds

    Cooking Directions:

    Preheat oven to 375° F.

    Place French bread halves on a baking sheet.

    In a small bowl, combine butter, mayo, garlic and salt.  Stir in cheese.  Fold in chicken and artichokes.  Spread half of mixture onto each French bread half.  Sprinkle each with almonds.

    Bake for 25 minutes or until bread is crispy and brown around the edges.

    Slice and serve immediately.
