I was lucky enough to have quite a few fresh cherries and what better treat for a Sunday morning than hot out of the oven scones. I did have a flash back to my first baking experience with fresh cherries. I was about 18 and just learning to cook and I guess the only cherries I had ever eaten had been the kind in the jar, so I didn't realize cherries needed to be pitted. Well you can guess how that turned out. It would have been okay if I hadn't proudly showed up to Sunday dinner with it. Well no pits in these delightful scones and with a hint of lime they are perfect.
Cherry-Lime Scones
Ingredients:
2 ½ cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
½ cup chilled butter
½ cup sugar
½ cup cherries, pitted and chopped into small pieces
1 tablespoon lime zest
1 cup sour cream
1 egg
3 tablespoons lime juice
½ cup cherries, pitted and chopped into small pieces
2 tablespoons sugar
Cooking Directions:
Pre-heat oven to 375 degrees. In a mixing bowl, combine flour, baking powder, baking soda, sugar and lime zest. Cut in butter with a fork. In a separate bowl, beat egg, sour cream, and lime juice together; stir in cherries and gently fold into flour mixture, just until it starts to combine. Pour onto a lightly floured surface and gently knead together. Roll out until about ½ inch thick and cut with a biscuit cutter or glass. Place on a greased or lined baking sheet. Sprinkle with remaining sugar and bake for 15-20 minutes or until lightly browned.
