Baguettes, baguettes, oh baguettes, how I love them. I have only recently learned to make bread that is edible, so I have not delved into the fine art of making french bread, but one of these days…. My neighbor makes wonderful baguettes and I must try someday, but for now I buy them. The Boursin cheese lends just the right amount of garlic and herb flavor with the chicken and mushrooms. If you haven’t tried Boursin, it is a creamy French cheese with garlic and chives and is super yummy. I love to just eat it on crackers and I thought it would be great with Chicken, and guess what? It is. Great for lunch, dinner, or even a great appetizer for your next party.
Cheesy Chicken Baguettes
3 chicken breasts, cooked and shredded or diced
2 small baguettes
1/2 red pepper, diced
1/4 cup onion, diced
6 baby portabella mushrooms, sliced
4 cups mozzarella cheese, shredded
2 5.2 oz Boursin cheese
Pre-heat oven to 375 degrees. Slice baguettes in half lengthwise and place on a baking sheet. Crumble Boursin cheese over baguette halves and spread as evenly as you can. I only used about half of the second wheel of Boursin, depending on the size of your bread, you may use more or less. Press shredded chicken over Boursin. Sprinkle each half with about half of a cup of mozzarella. Sprinkle red pepper and onion over mozzarella and layer on mushroom slices. Bake for 15 minutes or until cheese is melted and bread is browned around the edges. Slice in fourths and serve.
