Build a Better Me Healthy Blogging Challenge was the idea of my fellow Virtual Potluck member, Theresa of The Food Hunter’s Guide to Cuisine. I am pleased to participate in both giving and receiving encouragement for a healthier lifestyle. Any of you that visit often have heard my reluctance to exercise (I only run when crazy cows are chasing me) and I have a huge sweet tooth.
So we are going to try to make better choices this year, not just a month-long, New Year’s resolution kind of thing. We are kicking it off today and will be bringing you tips and recipes for better choices along with some great giveaways thrown in for fun.
My philosophy is everything in moderation, so I will continue to post my dessert recipes and on occasion something fried. I have very active boys who need all of the calories they can get and are literally eating me out of house and home!
Today I am sharing a healthy salad that is bursting with flavors. You have to admit, that’s one good-looking salad! I couldn’t wait to dive into it! POM Wonderful sent me a some of their new POM POMS Wonderful Fresh Arils to try, and I included them in this salad. I just love pomegranates but I have to admit, I’m sort of lazy about removing the arils and this was the answer. Look for them in the refrigerated produce case at your grocery store.
They were ideal to throw in my salad which made a great light lunch. The POM POMS would also be great added to yogurt and granola for breakfast or even into desserts. There are so many possibilities. I’m sure you know that pomegranates are super good for you with vitamins, potassium and they’re known for their powerful antioxidants known as polyphenols.

Winter Greens and POM Salad
3 cups mixed winter greens (I used romaine, spinach, and arugula)
2 tablespoons POM POM Wonderful Fresh Arils
1/4 cup blackberries
2 tablespoons toasted sliced almonds
3 tablespoons balsamic vinaigrette
Toss greens together and distribute onto two plates, sprinkle each with half of POM arils, blackberries, almonds and vinaigrette.
*Makes 2 salads, double the recipe as needed.
