As quoted from the cookbook I must totally agree. The flavors of the herbs and the apples and onions really come together nicely with the pork chops.
Fall is one of the busiest times on the ranch and I depend heavily on my slow cooker, but I tend to do the same basic recipes over and over. So it was quite nice to see a whole section of this cookbook dedicated to slow cooker recipes. I cook lots of pork roasts but I had never cooked pork chops in the slow cooker. I was very pleased with the result. The pork chops were falling apart tender, moist and full of flavor and the apples and onions were a really nice compliment. I served a little of the sauce over the meat as well as the potatoes and I'm telling you it was all gone in a flash; those two teenage boys of mine can make a pork chop disappear before quick can get ready.
