I just couldn’t resist the blueberries at the grocery store, we ate most of them just out of the carton. I saved a few and made some delicious scones. They disappeared so fast that my husband didn’t even get one, awe shucks, I guess I’ll make some more. Perfect for a lazy Sunday morning, everyone will love them, give ’em a try!
Blueberry Buttermilk Scones
Ingredients:
2 cups all purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
1/3 cup sugar
1 teaspoon ground cinnamon
1/2 cup butter
1 cup blueberries
1 cup buttermilk
1 egg
1 tablespoon natural (or regular) sugar
Cooking Directions:
Pre-heat oven to 375 degrees. In a mixing bowl, combine flours, baking powder, baking soda, sugar and cinnamon. Cut in butter with a fork. Add blueberries. In a separate bowl, beat egg and buttermilk together and gently fold into flour and blueberry mixture, just until it starts to combine. Mixture will be crumbly. Pour onto a cutting board or other surface and gently knead together. Divide in half and gently pat into two circles. Cut into wedges and place on a greased or lined baking sheet. Sprinkle with sugar and bake for 25-30 minutes or until lightly browned.
