Black beans and rice is a perfect side dish that pairs well with just about everything. I like to serve it with pulled pork, roasted chicken or with any Tex-Mex dish. Rice is such a quick dish to make and so versatile, this dish is done in about 20 minutes. The onions and chicken broth are savory while the cumin and garlic spice it up a little and the cilantro added at the end really enhances the flavor of the dish. Sometimes I like to add about a pound of well seasoned cooked ground beef and serve it as a main dish, I would think chicken would be really good too. Try it, experiment with it, come up with something delicious!
Black Beans and Rice
Ingredients:
1 tablespoon butter
¼ cup onion, diced
1 cup white rice
1 14.5 oz can chicken broth
1 15 oz can black beans, rinsed and drained
1 teaspoon salt
1 teaspoon cumin
1 teaspoon granulated garlic
¼ cup cilantro, chopped
Cooking Directions:
In a large pot, add butter and onion over medium-high heat. Cook about 2 minutes and add rice, stirring well. Add chicken broth, and seasonings, stir and bring to a boil. Stir in black beans and turn heat down to simmer. Cover and cook for fifteen minutes. Remove from heat and stir in cilantro.
