    Biscoff Brownie Bites

    Biscoff Brownie Bites

    Have you joined the Biscoff craze? Where has this jar of magic been all of my life?  Well obviously I am smitten and when you open up a jar and taste that first spoonful you will be too!  It ranks up there with Nutella and Dulce de Leche in my opinion.

    I have been wanting to bake with it for sometime but I just kept going to the cabinet for another taste.

    This week started off rather stressful and has not really let up.  Nothing seriously wrong but just a lot of little things that come with raising kids, owning your own business and life in general. I decided some chocolate was in order and that it was time to bake something with the Biscoff.

    Results according my son were amazing and I agree.  I made them into brownie bites which cook in just 12 minutes and I think we ate every single one in the next 12 minutes!  I knew I wanted to share these with you so I got up this morning and baked up another batch just for you!  Hopefully I won't eat them all before the kids get home from school!

    I used this handy little pan by Wilton but you can use your mini muffin tin also.  If you haven't hopped on the Biscoff train, get to the Walmarts and get you some!

    Biscoff Brownie Bites

    Ingredients:

    brownie batter:

    • ¼ cup butter, melted
    • ½ cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • ¼ cup flour
    • ¼ cup cocoa

    Biscoff batter:

    • 2 oz cream cheese, softened
    • 2 tablespoons powdered sugar
    • 1 egg
    • ⅓ cup Biscoff spread

    Cooking Directions:

    Preheat oven to 350° F.

    In a medium bowl combine butter, sugar, egg and vanilla.  Add flour and cocoa, stirring until all combined.

    In another small bowl combine cream cheese, powdered sugar, egg and Biscoff spread.

    Spray a silicone brownie pan or mini muffin pan with non-stick cooking spray.

    Drop brownie batter by teaspoonful into each cup.  Top with Biscoff batter and swirl with a wooden skewer.

    Bake for 12 minutes or until a wooden pick inserted comes out clean.

    Cool slightly in pan before serving.
