    Barbecued Bacon-Blue Grilled Cheese

    Barbecued Bacon-Blue Grilled Cheese

    Barbecued bacon, have you tried it?  My kids beg for it.  Every time I cook bacon, they ask if I will barbecue it.  Seriously.  I have added barbecue bacon to grilled cheese sandwiches before, but today I was at home by myself for lunch, so I changed it up and used Wisconsin blue cheese.  I looove Wisconsin blue cheese!

    Wisconsin blue cheese and bacon, yes it is a good combination!  I'm still on the quick and easy kick as you can see and I am trying to get into the Christmas shopping mode, but it has been another busy week.  I just really want to set in my chair and watch the Top Chef episodes on my dvr, maybe make some brownies, drink hot chocolate and have no schedule.

    Alrighty back to reality, it is dentist appointments, paper work, more paper work and did I mention the paper work?  I am also working on a couple more gift idea posts for you and a nice little giveaway coming soon!

    Okay, make this sandwich and then we can Christmas shop together!

     Barbecued Bacon-Blue Grilled Cheese

    Ingredients:

    • 4 slices bread
    • 2 tablespoons butter, softened
    • 6 slices cooked bacon, cut in half
    • 2 tablespoons barbecue sauce
    • ¼ cup blue cheese crumbles (or other shredded cheese)

    Cooking Directions:

    Spread one side of each slice of bread with butter.  Set aside.

    Brush cooked bacon with barbecue sauce and place under broiler for about 1 minute.  Turn bacon and coat the other side with barbecue sauce and return to oven and broil about one minute.

    Place 2 slices of bread, butter side down, into a skillet or griddle over medium heat.  Sprinkle each with half of blue cheese and top with bacon.  Place remaining slices of bread over bacon.  Cook until bread is lightly browned and carefully turn over and cook until browned on both sides.

    Cut sandwiches in half diagonally and serve immediately.
