Balsamic, Bacon and Pecan Summer Salad is great as a main dish summer meal or goes perfectly with grilled steak or chicken.
Salad has been my mainstay the last few weeks. There's just something about a fresh salad on a hot summer day that just hits the spot
I bought a huge tub of mixed greens, and added red grapes, nectarines, white cheddar plus crispy bacon and toasted pecans. I drizzled it all with Newman's Own Lite Balsamic Dressing, which was perfect balance with the sweet fruit and salty bacon.
It was so good that I ate it for lunch and then made it again for dinner with meatloaf and mashed potatoes. So, so delicious, I tell you.
Balsamic Bacon and Pecan Summer Salad
Ingredients
- 6 cups mixed greens
- 1 cup nectarines, diced
- 1 cup cucumbers, diced
- ½ cup red grapes
- ½ cup shredded, white cheddar cheese
- ⅓ cup toasted pecans
- 3 slices bacon, cooked and crumbled
- ½ cup Newman's Own Lite Balsamic Dressing
Instructions
- Add mixed greens to a salad bowl and add nectarines, grapes, cheese, pecans and crumbled bacon. Drizzle with Newman's Own Lite Balsamic Dressing.
- Serve immediately.

Absolutely the best summer salad. It looked like there were cucumbers in the photo so I added them and instead of grated white cheddar I just diced it. This will be a staple.
