Salad has been my mainstay the last few weeks. There’s just something about a fresh salad on a hot summer day that just hits the spot.
I bought a huge tub of mixed greens, and added red grapes, nectarines, white cheddar plus crispy bacon and toasted pecans. I drizzled it all with Newman’s Own Lite Balsamic Dressing, which was perfect balance with the sweet fruit and salty bacon.
It was so good that I ate it for lunch and then made it again for dinner with meatloaf and mashed potatoes. So, so delicious, I tell you.
- 6 cups mixed greens
- 1 cup nectarines, diced
- 1 cup cucumbers, diced
- ½ cup red grapes
- ½ cup shredded, white cheddar cheese
- ⅓ cup toasted pecans
- 3 slices bacon, cooked and crumbled
- ½ cup Newman's Own Lite Balsamic Dressing
- Add mixed greens to a salad bowl and add nectarines, grapes, cheese, pecans and crumbled bacon. Drizzle with Newman's Own Lite Balsamic Dressing.
- Serve immediately.
Disclosure: Newman’s Own provided me with a gift card for ingredients to create this salad recipe and of course, all thoughts and opinions are my own. Thanks so much for supporting the brands that help make Miss in the Kitchen possible.
