    Almond Butter Rice Krispie Treats

    Rice Krispie Treats are one of my all time favorite desserts.  They are ready in five minutes, you don't have to turn on the oven, and they taste so good!  I always think of my uncle when I make them because there is really no telling how many batches he made me over the years.  You see, we were best buddies, not only did he make Rice Krispie Treats on demand, he would drive me to the store just for a pack of Pop Rocks or to the Diamond Drive-In for an ice cream cone and he let me watch American Band Stand with him every Saturday after we watched Bugs Bunny & the Road Runner.  He was the coolest, and still is if you ask me!  These Rice Krispie Treats are extra special because I made them with Barney Butter!  Barney Butter is made from almonds, like peanut butter but with almonds.  I received a few samples of Barney Butter almond butter and whoa am I ever hooked!  It is all natural, has less saturated fat than peanut butter, just as much protein and fewer calories.  Not that you count calories when eating Rice Krispie Treats.  The Barney Butter adds great almond flavor and with browned butter they are all toasty and super delicious.

     Almond Butter Rice Krispie Treats

    Ingredients:

    • ¼ cup butter
    • 2 tablespoons Barney Butter
    • 3 cups miniature marshmallows
    • 3 cups Rice Krispies

    Cooking Directions:

    Spray a 9 inch pie plate with non-stick cooking spray, set aside.

    In a large pan melt butter over low heat, stirring until butter has browned.  Stir in Barney Butter quickly, then add marshmallows stirring until melted and combined.  Remove from heat and stir in Rice Krispies until all combined and cereal is well coated.  Pour into a 9-inch pie plate, spreading evenly.  Allow to cool and slice into 16 wedges.
