2011 Top Recipes

by Milisa on December 31, 2011

Time certainly flies doesn’t it?  Here we are at the end of 2011 and it has flown by.  I ran through my posts of the past year and realized what a great year it has been for this little food blog.  I really do appreciate all of the kind comments, emails and those of you that come around for every post.

I won my first recipe contest, was runner up in another and was selected to promote Emeril’s newest cookbook.  I even received a tweet from Emeril  and I was chosen as the top contributor for that promotion.  Out of that the Virtual Potluck was born, which is proving to be a great source of inspiration and support.  All great stuff, don’t you agree?

I have many new ideas and big  plans for the coming year so I hope you will continue to stop in and see what’s going on!  So without further delay here are your favorites from 2011!

Peanut Butter-Oreo Blondies

by Milisa on October 19, 2011

Peanut Butter-Oreo Blondies

Now is the time to make up for the lack of dessert recipes during the weeks of the Emeril One-Pot Cooking Party.  Speaking of which, the folks at T-Fal chose one of the twenty participating bloggers that they deemed the top performing blogger to win a T-Fal slow-cooker.  They picked ME!!!  So thanks to all of y’all for sticking with me, following along, and for leaving comments.  Your support means so much to me.  I promise to cook up some delicious food in that slow-cooker to share with you.

Onto this quick and easy dessert that also happens to be down right delicious.  A soft peanut butter bar stuffed with chopped up Oreos, that sounds good doesn’t it?  They are really simple but perfect for the peanut butter-chocolate lover in all of us.  You could tote these to potlucks or barbecues and I think they will be on my go to list for school parties.

Here’s the recipe, I’ve got to go have another one before the boys eat them all!

Peanut Butter-Oreo Blondies

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 12 oreos, coarsley chopped

Cooking Directions:

Pre-heat oven to 375 degrees.

Grease or spray a 8 x 11 1/2-inch baking dish.

In a large mixing bowl, cream butter and peanut butter together with an electric mixer.  Add sugar mixing until combined.  Add eggs and vanilla beating until all combined.  Add flour and baking soda, mixing thoroughly.  Add chopped Oreos and mix for about 1o seconds.

Pour into a baking dish, spreading evenly.  Bake for 25 minutes or until lightly browned.  Cool slightly and cut into squares.  Serve warm or at room temperature.  Store in an airtight container.

Enjoy!

Fluffernutter Brownies

August 30, 2011

I should know better than to declare my blogging plans. My computer quit working at the end of the week just before I finished off my Breakfast Marathon. Between flat tires trips to town and getting the boys ready for the first day of school and trying to blog from the IPad, I’m just not getting [...]

Peanut Butter Banana Smoothie

August 26, 2011

This Peanut Butter Banana Smoothie is the new favorite breakfast for busy mornings around our house.  I’ve mentioned before that my little fella loves ice cream so much that he wants it for breakfast.  Well this is so tasty that he doesn’t realize it isn’t actually a milk shake!  It is packed with potassium, protein, [...]

Gonna Want Seconds Ice Cream Squares

August 5, 2011

One of my least favorite house chores is cleaning out the refrigerator and I tend to procrastinate about it.  Well after discovering a spill in the refrigerator that I could only blame on myself, I could procrastinate no longer. On the bright side,  I found a little tub of dulce de leche that I’m sure [...]

Peanut Butter Ice Cream

July 23, 2011

During the summer we bale hay to have feed for our cows during the winter.  My husband and older boys do all of the irrigating.  My husband cuts and bales and hauls the hay with help from the boys.  Things breaks down, tires go flat, supplies are needed and that’s where I come in.  Now [...]
