Strawberry-Lemonade Cheesecake Ice Cream

Even though it hasn’t been all that warm here in Wyoming, I have been craving summer time and ice cream!  Although summer is crazy-busy on the ranch, I do love when everything greens up and I get my garden growing.   The boys are talking non-stop about school being out and  fishing for catfish down at the river.  We are ready for summer!

The kids were out of school on Friday so we branded a few calves.  I intended to take pictures but I ended up leaving my camera in the truck because we all have a job to do and I can’t hold the camera and give shots at the same time.  Even the little guy helps by shooing the calves that have been branded out into the pen.

Those little calves are so cute running and bucking around the meadow but boy are they feisty when you get them in to brand!  On occasion they kick the snot out of you.  Yesterday one particularly big calf jumped up after being branded and stepped on my foot, I let out quite a yelp and I’m pretty sure all of the boys were rolling their eyes at me.  I’m not quite as tough as they are but they don’t give me too hard of a time since I do the cooking!

I gave into my summer/ice cream cravings and whipped up this strawberry-lemonade cheesecake ice cream.  It is thick and creamy and the tart lemons mixed with the sweet strawberries are the perfect summer combination.  Like most of my other ice cream recipes, this has no eggs, so that means no cooking!  It’s a really special treat that can be made ahead and would be a great ending to a neighborhood barbecue or an afternoon of branding!

Strawberry-Lemonade Cheesecake Ice Cream

Ingredients:

  • 2 cups heavy whipping cream
  • 1 14 oz can sweetened condensed milk
  • 4 oz cream cheese softened
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 pound strawberries, diced

Directions:
Combine cream, sweetened condensed milk, and cream cheese until smooth.  Fold in lemon juice and pour into freezer bowl of ice cream maker.  Follow manufacturers directions.

Pour ice cream into a freezer safe bowl and fold in strawberries and lemon zest.  Freeze for 3 hours or until ready to serve.

Remove from freezer and allow to set about 15 minutes before serving.

I bought one of these for parents and they love it.  The frame comes with its own email address and I email photos directly to the frame.  It is so easy and they can see updated photos immediately.  Super cool, perfect for grandparents, aunts and uncles, or any one else you love to share photos with!

The Kindle from Amazon.  This is the basic model and I love mine.  It is a little different from the traditional book, but for me it is wonderful to be able to get a book as soon as I want it.  Handy for living in the boondocks.  This would be a great gift for anyone on your list who loves to read.

 Great knives are a must for any cook and these Ergo Chef Knives are the top of the line in my opinion.  This is the Guy Fieri Knuckle Sandwich Paring Knife, which I personally would love to have, hint, hint!

This is the Ergo Chef “Big Stick” in Guy Fieri’s Midnight series.  I have the Knuckle Sandwich “Big Stick” and it is hands down the best knife I’ve ever owned.  I promise any one who has a kitchen will love these knives!

This is the Sanyo Smokeless Grill.  I actually have this and love it.  I’ve grilled burgers, salmon, chicken, kabobs and more and it works like a dream.  So handy.  It comes in two sizes and I have the larger one.  It is a bit big to store, but I use it often enough to make it worth while.  It cooks evenly and is a snap to clean up.

A Flat Whisk is one of my favorite kitchen utensils and any cook will love it!  Makes a great stocking stuffer too!

                                                       Caudalie Spa in a Box perfect for any special lady on your list.  Really you can’t go wrong with anything from Sephora!

 

This is from Knives of Alaska and is such a quality knife for any of the guys on your list.  My oldest son and my brother have both been recipients of this gift.  Trust me, guys will love it!

The Maglite Flashlight, the classic Dad gift.  I love that these are made in the USA and you won’t find a more dependable light!  They now come in some cool colors too.

Magnet Balls.  These are great for kids 6 to 96!  These were a gift to my nephew who is 16 and my kids had such a fit over them that I bought them a set too.  Even the adults had a ball with them.  These are small magnets so they are not for small children.

Yikerz Magnetic Board Game.  My kids love magnets so much that I thought this was another great toy.  I love that they come in sets that will work together to make a larger game.  There’s a video on the link, watch it, it’s great!

 

FIJIT Friends Interactive Toy.  This one is new to me, but my 14 year old neice saw one in the store and thought it was the neatest thing ever. It dances to music and responds to voices, and comes in lots of different colors.  I am pretty sure this one would go over with little kids and big kids.

Okay for those of you who came for the Egg Nog Icc Cream, you will want to make the custard ahead of time to chill, overnight if you can before you make the ice cream.  It’s well worth the time, totally delicious!!

Egg Nog Ice Cream

Ingredients:

  • 5 egg yolks
  • 1 cup sugar
  • 1 cup whole milk
  • 4 cups half and half
  • 1 vanilla bean, split and seed scraped
  • 3/4 teaspoon fresh ground nutmeg
  • 2 teaspoons cinnamon

Cooking Directions:

With an electric mixer, beat egg yolks and sugar until thick and pale yellow.  In a dutch oven or large pan add milk, half and half, vanilla beans with seeds, nutmeg, and cinnamon over medium-high heat and bring to a boil, stirring occasionally.   Remove from heat and pour about 1 cup of milk mixture into eggs, whisking as you pour to temper the eggs.  Stir into remaining milk mixture and continue to cook over medium-high heat until thickened. Remove vanilla beans. Chill for at least 8 hours or completely cooled.  Pour into ice cream freezer and follow manufacturers directions.  Serve immediately or store in an airtight container in the freezer until ready to serve.
