Peanut Butter-Oreo Blondies

Now is the time to make up for the lack of dessert recipes during the weeks of the Emeril One-Pot Cooking Party.  Speaking of which, the folks at T-Fal chose one of the twenty participating bloggers that they deemed the top performing blogger to win a T-Fal slow-cooker.  They picked ME!!!  So thanks to all of y’all for sticking with me, following along, and for leaving comments.  Your support means so much to me.  I promise to cook up some delicious food in that slow-cooker to share with you.

Onto this quick and easy dessert that also happens to be down right delicious.  A soft peanut butter bar stuffed with chopped up Oreos, that sounds good doesn’t it?  They are really simple but perfect for the peanut butter-chocolate lover in all of us.  You could tote these to potlucks or barbecues and I think they will be on my go to list for school parties.

Here’s the recipe, I’ve got to go have another one before the boys eat them all!

Peanut Butter-Oreo Blondies

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 12 oreos, coarsley chopped

Cooking Directions:

Pre-heat oven to 375 degrees.

Grease or spray a 8 x 11 1/2-inch baking dish.

In a large mixing bowl, cream butter and peanut butter together with an electric mixer.  Add sugar mixing until combined.  Add eggs and vanilla beating until all combined.  Add flour and baking soda, mixing thoroughly.  Add chopped Oreos and mix for about 1o seconds.

Pour into a baking dish, spreading evenly.  Bake for 25 minutes or until lightly browned.  Cool slightly and cut into squares.  Serve warm or at room temperature.  Store in an airtight container.

One-Pot Blogger Cooking Party Finale

In case you missed it, I wanted to do a re-cap of the One-Pot Blogger Cooking Party from Emeril’s Sizzling Skillets and Other One-Pot Wonders.  It has been somewhat of a whirlwind of wonderful food that my family surely enjoyed.  I also wanted to say one more  thank you to Morrow Cookbooks – The Secret Ingredient Blog.  This was a great experience.

Of course the food was great!  The other bloggers were fabulous!  I enjoyed reading all of the other posts and seeing what everyone chose to cook.  Thanks to all of y’all who stuck with me, even though I couldn’t share every recipe.  I think I learned from the experience.  I tried foods that I had never tried and cooking methods that were new to me as well.  There is something to be said for slow cooking for developing flavors.

I have an interview with the “big city” newspaper next week and I have made some great connections through all of this.  I am glad that I had the chance to participate.
