Smoked Salmon Quesadillas with Chipotle Sour Cream

Sometimes on Sunday we have big Sunday suppers and on other occasions we enjoy simple snacks and smaller meals.  Smoked Salmon Quesadillas were the perfect afternoon snack after returning from a trip.

That’s right, last week our family took a little trip.  Off the ranch, for real!  Before we left I had an afternoon of cooking up sweets and snacks to share with you while I was gone.  As usual, Murphy’s Law took over and I had to make a flying trip to town and it totally blew my plans!

Well now that I’m home and tackling a mountain of laundry and catching up on the 650+ emails in my inbox I wanted to share something quick and easy and Smoked Salmon Quesadillas are just that, plus they are pretty darn tasty!

I love quesadillas, they are the perfect way to use up little bits of leftovers from the refrigerator, so many possibilities.  I kicked these Smoked Salmon Quesadillas up with a little Chipotle Sour Cream.  Honestly, I am such a sissy when it comes to spicy foods, I loved it but I was sweating by the time I was finished eating.

Smoked Salmon Quesadillas

Ingredients:

  • 20 corn tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded pepper-jack cheese
  • 2 cups shredded smoked salmon (about 8 oz)
  • 1/4 cup sliced green onions

Cooking Directions:

Place a griddle or cast iron skillet over medium-high heat.  Place tortillas on griddle and top with about 1-2 tablespoons of cheddar cheese, 2 tablespoons smoked salmon, a few green onions, 1-2 tablespoons pepper-jack and top with another tortilla.  Cook until browned and carefully turn over to brown the other side.

Remove to a cutting board and cut into 4 wedges, serve with Chipotle Sour Cream.

Chipotle Sour Cream

Ingredients:

  • 1 cup sour cream
  • 1 chipotle in adobo sauce, diced
  • 1 teaspoon adobo sauce
  • 2 tablespoons cilantro
  • 1/4 teaspoon salt

Directions:

Combine all ingredients into a small bowl and set aside while preparing quesadillas.

Yield: 10 quesadillas.
