Meat and potatoes that’s what is expected at our dinner table; green vegetables not so much. I try to find different ways to get my boys to eat more vegetables and some days I have better luck than others. I had a little of the smoked Gouda left from those amazing Roast Beef and Smoked Gouda Sandwiches that I made. I decided that it would go nicely in rice for a savory side that would be pretty quick to get on the table. The smokey cheese added such a great layer of flavor with the broccoli. I had a little left that even made a great lunch for me the next day. You could also add water chestnuts, mushrooms and some cooked chicken for a meal in itself. I’m am off to trudge through the mud and the muck and check on those cows and darling baby calves, it’s supposed to be warm today with sunshine! Hope y’all have a great day!
Smoked Gouda Broccoli Rice Casserole
1 tablespoon butter
1/2 cup onion, diced
1 cup long grain rice
1 3/4 cups chicken broth
1 teaspoon Mrs. Dash Seasoning Blend
3 cups cooked broccoli
1 cup smoked Gouda, grated
In a large saucepan, melt butter and add onions, cooking over medium-high heat until translucent. Add rice and stir. Add chicken broth and Mrs. Dash and bring to a boil. Cover and lower heat to simmer for about 15 minutes or until rice has absorbed all of the liquid. Add cheese, stir until melted. Fold in broccoli.
