Thanksgiving is in four days! I know that you all knew that already but I’m still scrambling to get ready, but I am coming to terms with that just being the way it is going to be.

Marx Foods was kind enough to send a box of goodies for our Thanksgiving Virtual Potluck.  It reminded me of an episode of Food Network’s Chopped.  Except for we weren’t required to use every ingredient.  Thank goodness for me but I think some of my fellow Potlucker’s may have!

My box included mushrooms, dried chilie’s,vanilla beans and rice.  I used the porcini mushrooms in last weeks VP post for the best from scratch pasta sauce, ever!  I’ve used some of the dried chilie’s here, in this must have appetizer.

I am generally in charge of the appetizers and desserts for Thanksgiving and sometimes I cook the ham.  So I knew I wanted to bring a delicious appetizer to this Virtual Potluck.  This is adapted from my sister-in-law’s signature appetizer, shrimp roll.  If you like shrimp, you will love it.

Shrimp Roll

Ingredients:

8 oz cream cheese, softened

1 tablespoon diced, dried Aji Amarillo Chilies, or other mild chilies

1/2 teaspoon finely grated garlic

2 tablespoons green onion, finely chopped

1/4 teaspoon Kosher salt

1/4 teaspoon Old Bay Seasoning

1 cup shrimp, cooked, shelled, chopped small

1/2 cup toasted pecans, chopped

1/4 cup toasted pine nuts, chopped

Directions:

Mix cream cheese, Amarillo Chili, garlic, green onion, and Old Bay Seasoning until smooth.  Fold in green onions and shrimp.  Pour mixture onto a sheet of plastic wrap or wax paper and roll into a log shape.  Twist ends and place in refrigerator for at least 4 hours or overnight.

Mix toasted nuts together in a shallow dish.  Roll chilled shrimp roll in nuts, coating all sides.  Serve with chips or crackers.
