Salted Caramel Mocha #Silkology

The past few weeks have been a little over the top in the stress department.  When I was approached to try out one of the Winter Silkology  recipes I knew it would be just what I needed.  I could sit down and enjoy a cup of coffee on a cool, fall day, take a deep breath and relax.

Turned out to be just what I needed.  You know I have two teenagers which is the cause of much of my stress.  My Mom recently sent me an email that said something to the effect of “Raising teenagers is like trying to nail jelly to a tree.” I don’t really know what that means but it sounds right!

Recently my oldest son was in a major vehicle accident, and thank the good Lord no one was hurt.  The next week my little guy broke his arm. I was gone to town about an hour away. It was late Friday afternoon when the school called, my cell phone never rang. Nice.

Saturday we made the one and a half hour trip to the ER and the hospital can’t put a cast on! Whaaat? Also the hospital gave me wrong information about having it casted.  Is this a conspiracy for me not winning the Mother of the Year Award or what?

Finally on Tuesday we have a cast!  Coffee? Yes please!

All of this just before Thanksgiving! Well the Silkology Salted Caramel Mocha really hit the spot! I had a few minutes of peace and quiet to enjoy it and it was wonderful!  If you like this check out all of the other wonderful Silkology Winter recipes here.

Salted Caramel Mocha

Ingredients:

  • 1/2 cup Silk Chocolate soymilk or Pure Almond Dark Chocolate
  • 1-2 shots espresso (or 2-4 Tbsp strong black coffee
  • Pinch of salt
  • 1/4 teaspoon ground cinnamon
  • 2 Tablespoon caramel flavored syrup,* divided
  • Regular or non-dairy whipped cream
  • 1/8 tsp sea salt for garnish

*Found in the grocery store coffee aisle

Directions:
Combine Silk, espresso (or coffee), pinch of salt and 1tablespoon caramel syrup in a saucepan and heat just until warm. Remove from heat and pour into a warm mug. Top with whipped cream, remaining caramel syrup and sea salt and a little sprinkle of cinnamon.
