Pom-Watermelon Popsicles

have a confession to make,  I hate popsicles.  To be exact, the store bought syrupy sweet ones that come in plastic tubes and the ones on wooden sticks too.  I have a weird thing with the wooden sticks, they give me the heebie-jeebies.  You didn’t know I was so weird did you? But I do like my homemade versions and my new popsicle molds have been working over time and the kids are loving it.  I make a new version every day like strawberry lemonade and peach smoothie popsicles. This version came from a so so watermelon that turned into a great summer treat.   Maybe I’m the only one who, more often than not, gets a watermelon that doesn’t have much flavor.  I hate for it to go to waste, so I pureed it, strained it and added a little sugar and a little POM juice which is powerful good for you.   How can you beat that?  POM pomegranate juice is available at most grocery stores in quite a few varieties.  I thought that the watermelon and pomegranate flavors really complimented each other.  Popsicles are really a great way to cool down, what’s your favorite flavor?

Pom-Watermelon Popsicles

Ingredients:

  • 3 cups watermelon, cubed
  • 1/3 cup sugar
  • 1/2 cup POM pomegranate juice

Directions:

Using a blender or food processor, add watermelon and pulse until pureed.  Pour into a fine strainer to remove pulp and seeds.  Combine watermelon juice sugar and POM juice.

Pour into popsicle molds or Dixie cups and freeze for at least 4 hours.
