POM-a-Rita Slushie

This week has been so hot and it seems like the world is on fire.  There are huge, horrific fires in Colorado, Montana and even here in Wyoming. On Tuesday I had to make a trip to get irrigation parts and take the kids to the orthodontist.  Coming home there was a huge haze coming over the mountain to the west.  As I passed the big lake I could see smoke coming over the eastern ridge.

By the next morning our whole valley was filled with smoke and we could not even see the mountains.  Fire scares the you-know-what out of me.  The wind was blowing about 30 miles an hour and no rain in sight.  Our ranch is pretty far away from these fires but we are on constant watch because it is so dry.  I hope and pray for rain.

An evening or two ago, after doing a little yard work, me and the little guy were hot.  He begged for a snow cone and I got to thinking I might like one too.

I have one of those little snow cone machines that shaves regular ice cubes.  I found Jelly Belly syrup for the little guy and he had a rainbow snow cone.  I grew up where there were snow cone stands and it was one of the best parts of the summer.  I don’t think I’ve ever seen a snow cone stand in Wyoming, well certainly not in the middle of nowhere!  So we make them at home.

I mixed up a pomegranate margarita concoction to pour over my ice.  I made a little more juice than I had ice so I decided to call it a slushie. Talk about cool and refreshing and just right after a long day.  It was just the right amount of sweet and tart.  If you like it a little sweeter, you could always add some simple syrup to the mixture.

POM-a-Rita Slushie


  • 1 1/2 cups shaved or crushed ice
  • 1/3 cup POM pomegranate juice
  • 1 teaspoon fresh lime juice
  • 1 oz tequila
  • 1/2 oz triple sec


Place ice in a glass.  Mix remaining ingredients in a small liquid measure and stir together.  Pour over ice and serve with a straw.
