Pear & Chocolate Chip Muffins

Today I am joining Barb from Creative Culinary and Jenn from Jenn Cuisine and other great bloggers from around the world to support the Hurricane Sandy Relief.  We are all posting comfort food that we would make and take to those in need, if we could.

 Pear & Chocolate Chip Muffins


  • 1 1/2 cups all purpose flour
  • 1 cup quick cooking oats
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 4 tablespoons butter, melted
  • 1/4 cup whole milk
  • 2 eggs
  • 2 pears, peeled, cored and diced (about 1 cup)
  • 1 cup chocolate chips (milk or semi-sweet)
  • 1/2 cup sliced almonds

Cooking Directions:

Preheat oven to 400°.

In a large bowl combine flour, oats, cinnamon, baking powder, salt and sugar.  Set aside.

In a small bowl add melted butter, milk and eggs, beat together.

Pour wet ingredients into dry just until combined.  Fold in chocolate chips and pears.

Spoon into greased or lined muffin tins.  Sprinkle with almonds.

Bake for 17-20 minutes or until a wooden pick inserted comes out clean.

Serve immediately or at room temperature.  Store muffins in an airtight container for up to 3 days.
