Peanut Butter Oat Bars


I was craving some cookies, but really too lazy to bake cookies, so I thought these peanut butter bars would fit the bill.  The oats give the bars a good texture and I think I’ve established I have to have chocolate with my peanut butter.  Pretty darn easy to throw together and tasty too.  Try them next time your having a peanut butter and chocolate attack, or am I the only one who has those?  Please tell me I am not.  

Peanut Butter Oat Bars

1 cup butter, softened

2 eggs

1 teaspoon vanilla extract

3/4 cup brown sugar

3/4 cup sugar

1 cup peanut butter

2 cups all purpose flour

1 cup rolled oats

1 teaspoon baking soda

1 teaspoon baking powder

1 cup chocolate chips

Cooking Directions:

Pre-heat oven to 350 degrees.   In a large mixing bowl, combine butter, peanut butter, and sugars, mixing with electric mixer until well combined.  Beat in eggs and vanilla.  Next add all dry ingredients, except chocolate chips and beat well.  Pour into a 11″x 15″ baking pan and press until evenly spread into pan.  Sprinkle chocolate chips over evenly.  Bake for 25 minutes or until a wooden pick inserted comes out clean.  Cool and cut into squares.
