No Bake Vanilla Bean Cheesecake

I had a major case of the Monday’s this week. It was an epic Monday.  So I’m turning it around with a super easy no bake cheesecake.

I’ve been on a major vanilla kick lately. What’s up with that? I’ve always loved chocolate way more than vanilla.  Have you tried the easy Vanilla Pound Cake yet? It’s so delicious! We also love this easy Berry Icebox Cake for summer.

Isn’t it funny how your tastes change? Don’t get me wrong, I still eat plenty of chocolate! I have been dying to try this incredible Mocha Cream Pie from Cookie Dough and Oven Mitt.

Where to Buy Vanilla Bean Paste:

So back to the vanilla. I think my vanilla cravings started with a jar of vanilla bean paste.  I first used it to make this Chicken Gnocchi Soup and then my Easy Vanilla Bean Ice Cream.  I’m totally addicted.

Of course the next step to make was a no bake cheesecake!  I need a little break after having a few computer complications. I headed to the kitchen and whipped up these Vanilla Bean Cheesecakes.

They were the perfect treat after dinner and they are pretty enough to serve to guests. They come together in less than 10 minutes and then you can pop item in the refrigerator for a couple hours to chill.

You can add a layer of graham cracker crumbs to the bottom or just serve up the cheesecake filling in individual jars. You could also make a quick graham cracker crust and serve this up in a pie plate or a cheesecake pan.

It’s a scorching 101° today with a heat index of 110° so no bake desserts are where it is at.  School starts this week and I suppose I’m never ready for summer to be over.

We have four day school weeks and I love that. Having Fridays off is so nice. We went in for open house and Emmet got to find his classrooms and meet one of his new teachers for sixth grade. Here’s hoping for a good year!

Ingredients

  • 2 cups heavy whipping cream
  • 8 oz cream cheese softened
  • 7 oz marshmallow fluff
  • 1 tablespoon vanilla bean paste
  • strawberries for garnish if desired

Instructions

  • Add heavy whipping cream, softened cream cheese and marshmallow fluff into a mixer bowl.
  • Beat using whisk attachment on medium-high until thick and creamy.
  • Add vanilla bean paste and beat on high speed about 1 minute.
  • Spoon into individual serving jars and refrigerate 2 hours or until chilled. Garnish with strawberries.

    These look and sound so delicious. These make me think of my sweet Nana, she absolutely loved cheesecake- especially with strawberries!

  2. I made this this last week on my weekend, this instructions were very easy to follow, and I had a lot of fun making this. Upon waiting for the dessert to finish, I decided to try some of it before it completely chilled. I came to discover that it really isn’t a dessert per say, it’s more of an topping for a dessert. I did think it was very tasty, but more of a cool whip topping. It went very well with strawberries, and even ice cream.
