Lime Breakfast Muffins

Muffins are a great breakfast treat.  I really like the zip from the fresh lime in this recipe.  They are moist on the inside and have a little crunch on the outside.  When I make muffins, which according to my kids is a lot, we snack on them all day.  This recipe is also great with lemons or oranges or  a combination of the two.   Make up a batch and see how quick they disappear!

Lime Breakfast Muffins


1 3/4 cups all purpose flour

3/4  cups sugar, plus 1/4 cup for topping

1/2 tablespoon lime zest

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 egg

1 cup sour cream

6 tablespoons butter, melted

1 tablespoon fresh lime juice

Preheat oven 400 degrees.  In a large bowl, stir together dry ingredients including lime zest.  In a small bowl add melted butter, sour cream, egg, and lime juice and stir together until well combined.  Stir wet ingredients into dry until just mixed.  Fill greased muffin tin half full and sprinkle each one with about 1/2  teaspoon of sugar.  Bake for 15 – 20 minutes.  Remove from pan and cool slightly.  Yield: 15 muffins
