Lemon and Basil Quinoa

Have you tried quinoa?  I had seen so many recipes and read about it on the Internet, but only recently did it become available around these parts.  It’s grain-like and it cooks just like rice, but has more flavor and a little different texture.  It is very high in protein and contains essential amino-acids, plus it is gluten-free.  The box that I bought stated that it had been pre-rinsed, because in it’s natural state there is a bitter coating.
As you well know I am way more about the sweets and deep fried foods than the healthy good for you stuff. My husband and kids are really meat and potatoes kind of eaters, literally! But I am here to tell you, we all liked it a lot.  I was expecting everyone to taste it and turn up their noses; however, they ate every bite!  They also say this makes a great breakfast, kind of like oatmeal.  Many possibilities to try and I will be experimenting with this new addition to my pantry.  Pick some up next time you shop, it is really good and good for you too.
Lemon and Basil Quinoa

Ingredients:

1 cup quinoa (rinsed if it hasn’t been pre-rinsed)

2 cups chicken broth

1 tablespoon butter

2 teaspoons lemon juice

1/2 cup Parmesan cheese, grated

1 tablespoon fresh basil (or 1/2 tablespoon dried)

Cooking Directions:

Add quinoa and chicken broth in a saucepan.  Bring to a boil, cover, reduce heat to simmer and cook 10 to 15 minutes or until liquid is absorbed.  Remove from heat and stir in remaining ingredients.  Serve immediately.
