So this isn’t your ordinary ice cream sandwich. The cookies are chocolate pizzelles spread with peanut butter and chocolate sauce and a little vanilla ice cream in between. I have to say this was the best ice cream sandwich I’ve ever made, okay so these were my first attempt at ice cream sandwiches. I will be making these often. If you don’t have a pizzelle iron, I think you could use a waffle iron or just bake the cookies in the oven. The pizzelles have a really neat design and are really light and crispy. I have to say I was inspired to make ice cream sandwiches after reading a post over at Ali the Lazy Dog, who happens to be one of my friends from high school. She posted a really yummy looking ice cream sandwich with rice krispie and peanut butter cookies. I was out of rice krispies, so I went to thinking how I could get some peanut butter and ice cream sandwiches and I hadn’t used my pizzelle iron in a good while, so here’s the result. For the Pizzelles
1 tablespoon brewed coffee
2 teaspoons baking powder
1 3/4 cups all purpose flour
1/3 cup cocoa powder
1/2 cup melted butter
3/4 cup sugar
For the filling:
Vanilla Ice Cream, softened
Chocolate Ice Cream Topping
In a mixing bowl, beat eggs and sugar. Add in coffee, melted butter, and cocoa powder, until well combined. Add flour and baking powder. Drop by spoonfuls onto pizzelle iron and cook until crisp. Cool on a wire rack.
Sandwich assembly: Spread about a tablespoon of peanut butter carefully over one side of a cookie and about one tablespoon of chocolate sauce over one side of another cookie. Spread a big scoop of softened ice cream over the peanut butter side of the cookie, carefully. Top with chocolate coated cookie. Wrap in plastic wrap or foil and place in the freezer until ready to serve. Repeat with remaining cookies. I made ten ice cream sandwiches. I broke a few cookies and we ate a few of the cookies.
* If you don’t have ice cream topping (like me, I never remember to buy any!) Make some really quick by microwaving 1 cup chocolate chips & 1/2 cup of milk in 30 second intervals; in my microwave it took 1 min. total. And you have chocolate sauce!
**If you aren’t as big of a peanut butter fan as my clan is, you could always use caramel! I may have to try that, would it be too much to add it with the peanut butter? Surely not!
