We are officially kicking off summer break! Wahoo! No more hectic mornings for a while.  The weather is also planning to kick off summer with temperatures in the 90’s this week!

We plan to stay cool with these Honey Berry Slushies! You won’t believe how easy they are to make!

Just three simple ingredients are all you need for this cool and refreshing summer treat. I started with R.W. Knudsen Family Just Blueberry Juice and added frozen strawberries and a touch of honey.

I threw it all into my food processor but a blender works great too.  My kids have never been big on eating breakfast first thing in the morning, so I will often make a breakfast smoothie to get him going. These Honey Berry Slushies were a nice change.

It gets so stinking hot here in Oklahoma and I’m always dreaming up new ways to cool down. I love that these slushies are naturally sweetened and you could totally sub in agave for the honey if you prefer it.

I am really hoping that I can squeeze in some fun with Emmet this summer. There’s a Diamond Mine over in Arkansas that isn’t too far from our place. We keep saying that we are going to give it a try.

Ingredients

  • 4 cups frozen strawberries
  • 2 cups R.W. Knudsen Family Just Blueberry juice
  • 1/3 cup honey
  • *optional garnish
  • sweetened whipped cream or whipped coconut milk
  • fresh berries
  • mint

Instructions

  • Add frozen strawberries, R.W. Knudsen Family Just Blueberry juice and honey to a food processor or blender and process until smooth.
  • Pour into glasses and garnish if desired.
  • Or store in individual servings in zip top freezer bags.

  1. Love this recipe. Always like a healthy drink for the summer. Sounds like you are going to be enjoying yours. Our family went to the diamond place in AR, was a lot of fun. No diamond, but a good memory.
