This month’s Progressive Eats Dinner theme is Mediterranean and is being hosted by Megan of Stetted.   I was pretty excited for this one because I love Mediterranean flavors but don’t make them near often enough. It’s been ages since I made my whipped feta spread!

These Greek Salad Skewers are so quick and easy that they are going to be my new go-to appetizer for every get together!

Greek Salad Skewers Recipe

There are just a few ingredients: fresh tomatoes, cucumbers, red onion along with Kalamata olives and Feta cheese.  I made a quick vinaigrette for drizzling over the skewers and it was ready to go in under 15 minutes.

This recipe makes 12 skewers but it is easy enough to double for a crowd.   My kids were scooped these up and were begging for more.

Greek Salad Skewers

Greek Salad Skewers are a quick and easy appetizer perfect for any party or celebration.

Ingredients

  • 12 bite-size slices red onion
  • 12 slices cucumber
  • 6 cherry tomatoes cut in half (or 12 whole if they are small)
  • 12 bite-size chunks feta cheese about 2 oz
  • 12 Kalmata olives pitted
  • 1/4 cup olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Cavender's Greek seasoning
  • 12 wooden skewer picks

Instructions

  • Thread vegetables, cheese and olives onto wooden skewers. Mix olive oil, vinegar, and Greek seasoning together. Drizzle over skewers. Serve immediately.

  2. These are delicious but I had trouble keeping the feta cheese from crumbling and falling off the skewers; any suggestions?

  3. My gym teacher wants me to eat greek salad everyday. He told me that it was one of the healthiest salad ever. He was Greek and he referred me to eat at El Greco, his favorite greek food restaurant. I agree with him. Their rotisserie chicken, pita wraps, salad and kebabs are all healthy. It helped me a lot in my body and fitness goal. Good thing, I had some discounts and offers when I tried their online-orders.
