This is a very moist scone with delectable chunks of apple and a little crunch from toasted walnuts topped of with a sweet vanilla bean glaze. I think this is my favorite scone recipe yet! You wouldn’t have to toast the walnuts, but it really brings out the flavor of the walnuts. As a kid, I never ate walnuts, and now I can’t get enough of them. These made a delicious breakfast and I even packed them in the guys lunch boxes for dessert. In fact they are all gone and I think I will bake up another batch, I may have a new addiction.
Apple Scones with Toasted Walnuts & Vanilla Bean Glaze
2 1/2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup sugar
1 teaspoon cinnamon
1/2 cup butter, chilled and cut into cubes
1 cup vanilla yogurt
1 teaspoon vanilla
2 cups peeled, cored and diced apples
1/2 cup toasted walnuts, chopped
1 cup powdered sugar
3 tablespoons milk
1 vanilla bean
In a large mixing bowl, combine flour, baking powder, baking soda, sugar and cinnamon. Cut in butter until mixture is crumbly. Add yogurt, egg, and vanilla. Stir just until combined. Fold in apples and walnuts. Scoop onto greased or lined baking sheets 3 inches apart in about 1/3 cup scoops. Bake at 375 degrees for 18-20 minutes or until lightly browned.
Meanwhile, split and scrape the vanilla bean into a bowl with the powdered sugar and milk and stir until smooth.
Remove scones to a wire rack and spoon glaze over scones while they are still warm out of the oven. Serve warm or at room temperature.
