One of my favorite snacks has always been apple slices dipped in peanut butter and it got me to thinking that peanut butter icing would be excellent on an apple butter spice cake.  Sure enough, it is pretty dang delicious.

I haven’t always had the best luck with cakes from scratch but this one is super simple and comes out moist and delicious. I’m always a little nervous making a bundt cake because I am never sure that I get the pan coated good enough. I used butter and the butter wrapper to grease the pan and it came out perfectly! Do you have a secret for getting the cake out clean? If so I’d love to hear it!

My husband was doing a little dirt work near the house the other day and he found a couple of orphaned baby rabbits. Oh my word they are so tiny.  Tiny and CUTE! We brought them in an made them a little nest in a box with a few tea towels. We have been feeding them with a syringe and they are doing well.

I snapped a picture on instagram the first day we brought them in.  I can’t believe we found them and have been able to feed them and keep them alive.

It’s not unusual for us to feed a bummed calf but there’s just no resisting the baby bunnies!  Happy spring, right?  Well if I ever finish my dreaded bookwork for taxes, I will get a few more pictures, because I know y’all love baby critters as much as I do!

Apple Butter Bundt Cake with Peanut Butter Icing

Ingredients

  • for the cake:
  • butter or non- stick cooking spray
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 10 tablespoons softened butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 ½ cups Musselman’s Apple Butter
  • 1 teaspoon vanilla extract
  • for the icing:
  • 1 cup creamy peanut butter
  • 3 tablespoons softened butter
  • ¼ cup sour cream
  • 2 cups powdered sugar
  • ¼ cup milk
  • cup chopped honey roasted peanuts for garnish

Instructions

  • Preheat oven to 350 degrees. Butter a bundt pan (or spray with non- stick cooking spray). Set aside.
  • Sift flour, baking powder, baking soda and salt together into a bowl. Set aside.
  • In a mixer bowl combine butter and sugars on medium speed until creamy, about 2 minutes. Add eggs one at a time, mixing until combined. Add apple butter and vanilla extract and mix on medium speed until combined. With mixer on low speed, add flour mixture a little at a time until incorporated. Raise speed to medium and beat for 2 minutes.
  • Pour into prepared pan. Bake for 55-60 minutes or until a knife inserted into center comes out clean.
  • Remove pan to a wire rack to cool for five minutes. Gently loosen cake from pan with a knife. Invert cake onto wire rack. Allow to cool 15-20 minutes.
  • Meanwhile, prepare the icing.
  • Add peanut butter, butter and sour cream to mixer bowl. Alternate powdered sugar and milk until mixture is smooth and well combined.
  • Spread over cake (slightly warm or completely cooled- either is fine). Sprinkle the top with chopped honey roasted peanuts.
  • Slice to serve.

Notes

Cover with plastic wrap and store at room temperature up to 3 days.

  1. I love this cake! Jerry would love it, too. I had missed that you found baby bunnies. Here’s a word of advice from an animal rescuer. Did you know that baby bunnies don’t know when to stop eating, and if you feed them too much they will pop? As in, not literally pop open, but pop inside and die? Yeah, I didn’t either, until it happened to me. So, word of advice…just be careful how much you feed them (how do momma bunnies know, anyway?). Good luck and I hope that they make it!

  4. I hate to tell you, but those babies might not have been orphaned. The moms stay away from the nest except for feedings at dawn and dusk so that predators can’t find their nests. So unless you guys watched the nest for a day or so, it’s possible you just didn’t see mama.
