I’ve been enjoying the spring weather so much and this is a super easy spring appetizer that that could also double as dessert.  A sweet appetizer if you will.  You can have these Strawberry Mascarpone Appetizers ready in five minutes, so you could throw this together when you have unexpected guests or even as a quick snack.

Over the weekend was the prom, Cody’s senior prom.  SENIOR PROM.

Alrighty back to the food before I get all mushy here.

I love fruity appetizers – especially is mascarpone is involved. These look wonderful. I’m digging the honey and fresh thyme, too.

I love that picture of your daughter’s prom night…with family and friends. I hope they had a great time. And as far as fruity appetizers go, these take the cake!

The joys of prom–your oldest son’s last year in high school. Great picture. He must be excited about his upcoming adventure after high school.

Hi! Recipe looks really yummy… I’m making these for a baby shower tomorrow… Wanted to know how many does it make? Do you break the graham crackers into individual squares?

Break the graham crackers in half to form squares. This recipe will make 8 appetizers. You can double the recipe as needed.
