Strawberry Mascarpone Appetizers - Miss in the Kitchen

I’ve been enjoying the spring weather so much and this is a super easy spring appetizer that that could also double as dessert.  A sweet appetizer if you will.  You can have these Strawberry Mascarpone Appetizers ready in five minutes, so you could throw this together when you have unexpected guests or even as a quick snack.

Over the weekend was the prom, Cody’s senior prom.  SENIOR PROM.


The whole gang Garrett (my nephew), Bailey, Cody (my oldest), Jordan, Tucker (my middle son), Maranda, Mike and my niece Emily.  Don’t they look great! Gorgeous young ladies in gorgeous dresses and handsome guys.  So grown up.

Alrighty back to the food before I get all mushy here.

Strawberry Mascarpone Appetizers

I could eat these tasty little Strawberry Mascarpone Appetizers all. day. long.  In fact these were so good I didn’t even share.  That’s right.  Now you know how I really am.  They are just so darn tasty and actually I was the only one home and they are best if you eat them right away. Seriously.

Strawberry Mascarpone Appetizers - Miss in the Kitchen

Strawberry-Mascarpone Appetizers


  • 4 whole graham crackers
  • 2 tablespoons mascarpone cheese
  • 4 medium sized fresh strawberries, sliced
  • 2 teaspoons honey
  • 1 teaspoon fresh thyme


  1. Break graham crackers in half, creating 8 squares.
  2. Spread each with mascarpone.
  3. Layer 4 strawberry slices over each square.
  4. Drizzle with honey and sprinkle with fresh thyme.
  5. Serve immediately.

Hi! Recipe looks really yummy… I’m making these for a baby shower tomorrow… Wanted to know how many does it make? Do you break the graham crackers into individual squares?

Break the graham crackers in half to form squares. This recipe will make 8 appetizers. You can double the recipe as needed.
