Toasted Sesame & Almond Caramel Popcorn - Miss in the Kitchen

A few weeks back I found myself participating in the Kitchen Conversations webinar with a few other bloggers.  It was hosted by  Land O’Lakes and Ree, The Pioneer Woman.

I had been thinking of all sorts of popcorn recipes since the webinar.  When I started cooking up the Toasted Sesame & Almond Caramel Popcorn the guys were pretty skeptical to say the least.

I knew it would either be fabulous or a complete flop.  I got what I was hoping for and it was FABULOUS!  The guys were surprised and they loved it too.  I know it sounds a little bit different but trust me, it is addicting.

Toasted Sesame & Almond Caramel Popcorn - Miss in the Kitchen

Just look at those toasted sesame seeds and almonds and that sticky caramel, how can you resist?

Toasted Sesame & Almond Caramel Popcorn

Toasted Sesame & Almond Caramel Popcorn

Ingredients

  • 2 tablespoons Land O'Lakes butter
  • 2 tablespoons sesame seeds
  • 1/2 cup sliced almonds
  • 2 tablespoons Land O'Lakes butter
  • 1 tablespoon toasted sesame oil
  • 1/4 cup dulce de leche caramel
  • 4 cups mini marshmallows
  • 8 cups popped popcorn
  • 1/4 teaspoon Kosher salt

Instructions

  1. In a medium skillet add 2 tablespoons butter over low heat. When butter is melted add sesame seeds and almonds and cook, stirring often until toasted, about 8 minutes.
  2. Pour into a shallow dish to cool.
  3. Add 2 tablespoons of butter to a large pan or Dutch oven and melt over low heat. Add toasted sesame oil, and dulce de leche, stir until melted and smooth. Add marshmallows and continue to cook, stirring constantly until completely melted and smooth. Remove from heat and stir in popcorn, until completely coated.
  4. Pour onto a lined baking sheet and spread flat. Sprinkle with salt and reserved toasted sesame seeds and almonds.
  5. Allow to cool slightly and serve warm or at room temperature.

My husband and I are all over the Asian cooking trend – we used to keep the local restaurants in business, but the salt content was becoming a health concern. We love all of the slightly healthier Asian recipes we’re finding lately!!

p.s. Meatballs sound great to me, they just don’t seem like a new trend. and, about quinoa: the first time I tried it, I thought it was good enough to eat again. However, when I made it at home, the kids and I hated it (I thought it tasted like dirt). My husband thought it was fine, but he also thought it was rice! LOL

Definitely the vegetables! I’m learning to add more veggies in my meals. My newest addiction is cauliflower! There are so many recipes out there for using cauliflower! I <3 The Pioneer Woman's Cauliflower soup. I can't wait to try using it as a pizza dough! =)

I’ve been usingmany whole grains lately like quinoa and spelt. Quinoa is quite versatile, I use it with my morning oats and add it to quick breads. I highly recommend toasting prior to cooking, it adds a nice nutty flavor (and aroma). Your popcorn looks delicious! When I was a youngster my neighbor used to make me caramel popcorn balls at Halloween, just something I will never forget.
