Oatmeal cookies are becoming my favorite, but I’m sure I’ve never passed up a cookie. Ever. I had some cinnamon chips in the pantry and decided they would be perfect in oatmeal cookies.
Oatmeal cookies seem like a good after school snack and I will admit I did have these for breakfast. Oatmeal equals healthy, right? I thought so. These Oatmeal Cinnamon Chip Cookies did not stay in the cookie jar for very long.
I just spent the evening helping my son fill out college applications. Seriously, where did the time go? It is getting more real every day as his last year of high school is drawing near to the end. I have mixed feelings. I’m relieved because focusing on school has been a challenge for him. Outside work on the ranch is a much bigger draw. At the same time I’m so sad that my little boy, okay he’s not little at all, but he’s on the brink of being a MAN.
I saw a sign on facebook last night that said “boy: a noise with dirt on it” so true. I got to get one of those, signs I mean. I already have three noises with dirt on them.
Okay back to baking cookies.

I might need an intervention or at least some help eating the cookies! My middle son keeps asking if I will cry at graduation. Um yes, I tear up at every graduation, even though it’s not my kid graduating. When they play the senior video with all of the photos of these kids from the past 18 years, I will be a goner, a blubbering mess. Any advice? I would love to hear it!
Ingredients
- 1/2 cup butter, softened
- 3/4 cup brown sugar, packed
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all purpose flour
- 1 1/2 cups oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 10 oz bag cinnamon chips
- 1/4 cup sugar
Instructions
- Preheat oven to 375 degrees F.
- Add butter and brown sugar to a mixer bowl and beat at low until well combined. Add eggs and vanilla and continue to beat until incorporated.
- Add flour, oats, baking soda and salt and beat at low speed until thoroughly combined.
- Fold in cinnamon chips.
- Scoop onto a lined baking sheet about 2 inches apart. Dip a glass in the 1/4 cup of sugar and flatten cookies gently.
- Bake for 10 minutes or until lightly browned. Remove to a wire rack to cool.

They sound so good and it’s virtually impossible for me to get cinnamon chips. I could get locally grown kumquats or daikon radishes but a darn cinnamon chip is torture to get. I love oatmeal + cinnamon!
I didn’t even know there was such a thing as cinnamon chips. Interesting. I love cinnamon, always use a ton of it in recipes. So good and good for you. Let’s pretend these are good for you too… I bet they taste amazzing.
