Cowgirl Cookies: Salted Caramel Chocolate Oatmeal Cookies with Milk Chocolate Chunks from Miss in the Kitchen

Today I’m going to tell you about my new boots and my new favorite cookies. These cookies are Salted Caramel Chocolate Oatmeal Cookies with Milk Chocolate Chunks.  I decided Cowgirl Cookies would be much easier to say and since I live on a ranch and we are talking about boots today…..anyway….

About the new boots.  I don’t ever claim that I’m a cowgirl.  My husband is a cowboy, my kids are cowboys, I do live on a ranch, I do own cows, I do wear boots.  I do chase cows on foot, sometimes they chase me.  I hardly ever ride a horse.  Does all of that make me a cowgirl or not? I’m not sure.

Still, cowgirl or cook, I need boots.  These are Ariat Pro Baby Boots from Country Outfitter. Boots are a necessity on the ranch, flip flops are not!  But let me tell you  these boots are comfortable, I’m talking, wear them all the time comfortable.  I am just as likely to wear them grocery shopping as I am when I’m headed to the barn. I loooove them and I think they are pretty stylish too.

I have pointy-toed boots with riding heels, they look cool, more cowgirl-like, but after running up and down the alley and across the cow pen, my feet are killing me!

We check the cow and horse water every day.  It can freeze up , things can go wrong and you don’t want your animals going with out water.  We wear our boots.

 talking, wear them all the time comfortable.  I am just as likely to wear them grocery shopping as I am when I'm headed to the barn.

Isn’t it CUTE!  Baby horses and calves are my favorite part of ranching.  And a Valentine’s baby, sweet.

Okay remember the cookies, oh yes you are going to love these Cowgirl Cookies!  They are chewy and a little brownie-like, they have browned butter which adds a nice nutty flavor in the background plus pecans and milk chocolate chunks.  On top of that they have salted caramel.
How can you resist?  I know I couldn’t and neither could the cowboys!  Boots and cookies and baby horses, this might be my favorite post ever y’all!
Cowgirl Cookies: Salted Caramel Chocolate Oatmeal Cookies with Milk Chocolate Chunks | Miss in the Kitchen

Cowgirl Cookies

Salted Caramel Chocolate Oatmeal Cookies with Milk Chocolate Chunks

Ingredients:

  • 1/2 cup salted butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • 1 cup rolled oats
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 cup chopped pecans
  • 2 3.5 oz Green & Black’s Milk Chocolate Bars, coarsely chopped
  • 1/4 cup dulce de leche caramel
  • 1/4 teaspoon fleur de sel (or other flake salt)

Cooking Directions:

Preheat oven to 350°F.

Add butter to a small pan and cook over low heat until browned bits have formed.  Stir often and be careful not to burn the butter.  Pour into a bowl and allow to cool 10 minutes.

Add browned butter and brown sugar to mixer bowl and beat at low speed until combined.  Add eggs and vanilla, mixing until combined.  Add flour,cocoa powder, oats, and baking soda beat for 2 minutes at low to medium speed until well combined.  Add pecans and chopped milk chocolate and mix at low speed until thoroughly combined.

Scoop onto a lined baking sheet about 2-inches apart.  Bake for 10 minutes and remove from oven.  Using a spoon (like a small soup spoon) press a slight indention into the center of each cookie.

Spoon about 1/2 teaspoon of dulce de leche* into each indention.  Sprinkle lightly with salt and allow cookies to completely cool on baking sheet.

*dulce de leche is easier to work with if it is slightly warmed.  I heated it in the microwave for about 20 seconds.

Store in an airtight container.

Yield: 30 cookies

But…I think you may have forgotten the cocoa powder? It’s in the ingredients list but not the directions.

Those boots are too cute, I love Country Outfitters. I love that fashion, I worked in a Western wear shop several years, my favorite part was putting outfits together for people and dressing mannequins. So much fun!!!

Being a small operation farm girl myself and a PBR addict, I practically live in my boots….from Ariat to Justin to Luccese (my dress boots)…..my new pair of Ariat Rodeo RockerBaby boots are the most comfortable I’ve ever owned!
I had already liked Country Outfitters (& I follow them on twitter). I have a cake/cupcake home operated business (Taylor Made Cakes), LOVE to bake and new recipes are one of my fave things to try. Since caramel is a particular weakness of mine, I’ll be trying this recipe soon-sounds DELISH! Thanks!
