Bacon and chocolate are a really great combination.  Any southerner can tell you that dipping your bacon in chocolate gravy makes for the best breakfast on earth!

If you haven’t tried the bacon and chocolate combination, these Browned Butter Bacon Congo Bars will be a good taste test for you.  With Valentine’s Day coming up this week I thought it was time to try my hand at pairing bacon and chocolate in a dessert. A little salty and a little sweet, you will love it!  I added some nice pecans for a little extra crunch.

Before I had good rimmed cookie sheets, Silpats, and OXO cookie scoops I didn’t like making individual cookies.  I always made my chocolate chip cookies into bars, it was just easier.  A few years ago I came across the very talented Bakerella’s Congo Bars.  I started thinking about them and was inspired to make my own version….with BACON of course!

You know when I say bacon that the next thing I’m going to say is Petit Jean.  It’s the best in my book and if you are not in the Arkansas or Texas areas, you can have it DELIVERED TO YOUR DOOR!  Bacon delivery, now that’s what I’m talking about!

You really should make a batch of these Browned Butter Bacon Congo Bars for your Valentine.  I mean really what is more romantic than browned butter, bacon and chocolate?  Seriously!

Browned Butter Bacon Congo Bars

Ingredients:

  • 1 cup butter, softened, divided
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup chopped pecans
  • 5 slices bacon, cooked and crumbled

Cooking Directions:

Preheat oven to 325°F.

Spray a 9 x 13 -inch pan with non-stick cooking spray, set aside.

In a small saucepan, add 1/2 cup butter and cook over low heat.  Stir often and cook until brown bits form being careful not to let it burn.  Pour into a bowl and allow to cool about 10 minutes.

Add softened butter, browned butter and sugars to a large mixer bowl.  Beat at medium speed until creamy.  Add eggs one at a time, beating until incorporated.  Add vanilla and beat until well combined.

Add flour, baking powder and salt and beat until well combined, about 2 minutes.

Fold in chocolate chips, pecans and bacon.  Spread into prepared pan evenly.  Bake for 30-35 minutes or until lightly browned and a wooden pick inserted in center comes out clean.

Cool for 30 minutes, cut into bars and serve.

Store in an airtight container.
