Have you started planning you menu for the big game this weekend? These Sweet & Spicy Barbecue Chicken Sliders will be the hit of the party!  Plus I made a super easy slaw so you can serve them up Memphis style, my favorite!

The star of this barbecue sauce is a bit unexpected but ever so good!  It’s Musselman’s Apple Butter!  Yes barbecue sauce made with apple butter, it adds the perfect depth of flavor to the chicken and I gave it a little kick with some jalapeno jelly.  Not too hot of course, but just the right amount of spice.

So are you excited for the Super Bowl?  Honestly, I am really the only football fan in the house.  Isn’t that crazy?  I live with a houseful of guys and none of them like watching football!  Playing yes, watching, not really.

My favorite team has been the Broncos since I was a teenager, so I don’t really know who I will be rooting for, but I still like to watch.  The guys mainly watch for the commercials.  Everyone is equally excited for the food!

Sweet & Spicy Barbecue Chicken Sliders with

Ranch & Green Onion Slaw

Ingredients:
for Sweet & Spicy Barbecue Sauce:

  • 1 cup Musselman’s Apple Butter
  • 1/2 cup ketchup
  • 3 tablespoons jalapeno jelly
  • 1 teaspoon liquid smoke
  • 1 teaspoon granulated garlic

for sandwiches:

  • 10 dinner size rolls
  • 2 cups cooked and diced chicken

for slaw:

  • 2 cups shredded cabbage
  • 2 tablespoons grated carrot
  • 1/4 cup chopped green onions
  • 2/3 cup Ranch dressing
  • 1/2 teaspoon fresh ground black pepper

Cooking Directions:

Add apple butter, ketchup, jalapeno jelly, liquid smoke and garlic to a saucepan.  Heat over medium heat, whisking together until mixture starts to bubble.  Add cooked chicken and lower heat to simmer, cooking about 10 minutes, stirring often until heated through.

For slaw: Mix all ingredients in a medium-sized bowl tossing together until well combined.  Cover and refrigerate until ready to serve.

Assemble sandwiches: Slice rolls in half, top with about 2 tablespoons of barbecue chicken, about 1 tablespoon of slaw.

I always go with pizza, homemade of course. It’s a tradition in our family and has been since I can remember. My parents always ordered it out though, they aren’t the pizza dough making type!

I’m really liking this idea of making a barbecue sauce with apple butter. I wouldn’t have thought of it, but it sounds so good! My menu for the game isn’t final yet, but it will surely include some Oven Baked Wings and Mini-Meatballs!

My local team, the Baltimore Ravens, are in the Superbowl this year so I am planning to go all out with the appetizers and snacks! Just to name a few…homemade guacamole and salsa, Buffalo chicken wings, and nachos. I’m going to make a big pot of chili, too. These BBQ sliders look delicious, so I may be adding them to the menu! Go Ravens!

I honestly don’t have a Super Bowl menu this year. Which is just fine with me, a good change-up. We’re invited over to play broomball on the lake with some friends that afternoon & then eat with them. All I know is we’re bringing dessert! :)

I love the idea of apple butter in BBQ sauce – yum! We’ll probably have pulled pork tacos or chicken nachos for the Super Bowl. I think you should root for the Ravens :)
