Blueberry Lemon Poppy Seed Waffles
Breakfast food is good anytime of day, especially when it’s something so tasty as Blueberry Lemon Poppy Seed Waffles! I was fortunate to have my oldest niece for the day and I set out to make breakfast with her.
It was one of those days that seemed like a Monday, you know, 42 phone calls, faxes to be sent and business to discuss. So we started the waffles, took some photos, made some calls, sent some faxes, and finally finished the waffles about lunch time. Needless to say we were starving and we immediately started snacking on them right out of the waffle iron!
These Blueberry Lemon Poppy Seed Waffles are packed with flavor and are really good without adding any syrup or butter, which makes them handy for hurry-up mornings, or every morning at my house!
This is also the kind of breakfast I love to serve on the weekends with lots of butter and syrup and of course a big slice or two of bacon.
I used some of my very favorite kitchen gadgets and tools from OXO to create these Blueberry Lemon Poppy Seed Waffles.

Blueberry Lemon Poppy Seed Waffles
adapted from Sugar & Salt
Ingredients:
- 2 cups all purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 tablespoons poppy seeds
- 3 eggs, separated
- 1 3/4 cup milk
- 2 oz fresh squeezed lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons vegetable oil
- 2 cups blueberries (fresh or frozen)
Cooking Directions:
Add flour, sugar, baking powder, salt and poppy seeds to batter bowl and mix.
Using egg beaters, beat egg whites until stiff, set aside.
Add egg yolks, milk, lemon juice, lemon zest and vegetable oil to dry ingredients mixing until just combined. Fold in egg whites until all incorporated. Fold in blueberries.
Heat waffle iron and spray with non-stick cooking spray.
Pour about 3/4 cup of batter onto waffle iron and cook according to manufacturers directions.
Repeat with remaining batter.
Serve plain or with butter, syrup and additional blueberries if desired.

These waffles look amazing! I need to use my waffle iron more often. I love anything lemon-poppy seed.
I love waffles, just wish the rest of the family liked them as much as me. Breakfast for dinner never gets old. Lately I have been craving pumpkin waffles and have a few recipes pinned. Maybe this weekend!

The blueberries with the lemon poppy seed waffles really push this over the top. Love.
Blueberry and lemon is one of my favorite combinations. And I also love the addition of poppyseed to these waffles. Yum!
