Basil Pesto
As summer comes to an end my basil plants are finally big enough to make a batch of pesto. I love pesto and it is so easy to make. I try to make a batch or two each summer and put a little in the freezer to enjoy through the winter. I freeze the pesto in ice cube trays and then place them in plastic freezer bags, perfect for pastas and soups.
For basil pesto you will need fresh basil, Parmesan cheese, fresh garlic, good olive oil, salt, fresh ground pepper and….
toasted pine nuts. Guess who forgot to put them in the photo.
Grate the Parmesan……
Grate the garlic.
Throw it all in the food processor and drizzle in some olive oil.
It’s that easy!

Basil Pesto
Ingredients:
- 3 cups fresh basil
- 3/4 cup Parmesan cheese, coarsely grated
- 2/3 cup pine nuts, toasted
- 4 garlic cloves, grated
- 3/4 cup olive oil
- salt and fresh ground pepper to taste
Directions:
Add fresh basil, Parmesan, pine nuts, and garlic to bowl of food processor. Pulse for about 30 seconds or until basil and pine nuts are coarsely ground. Place food processor on low speed and drizzle in olive oil. Season with salt and pepper and stir to combine. Store in an airtight container in the refrigerator until ready to use.
