Roasted Peaches & Honey Ice Cream

Two boxes of canning peaches are currently sitting in my kitchen. I haven’t really done a lot of canning so you can expect a few more peach recipes coming your way.  These peaches are Elberta peaches which are firmer and better for canning and freezing.

I’ve been noticing some roasted fruit recipes around on Pinterest and wanted to try my hand at roasting peaches.  I just tossed them with a little sugar and put them in the oven.  The results were great.  The peaches had a little chewier texture that I thought would be great in homemade ice cream.  I plan on roasting a few more and stirring them into oatmeal. They are gooood.

I sweetened the ice cream with honey and a little sugar and although it was really sweet, I loved the flavor of the honey with the peaches.  It was a huge hit with the family and  I will be making it again soon.  Homemade ice cream really is one of the best things of summer!  Like I said before, I’m enjoying every last second of this summer and I hope you are too!

Roasted Peaches & Honey Ice Cream

Ingredients:

  • 1 cup heavy whipping cream
  • 1/2 cup honey
  • 1/2 cup sugar
  • 2 teaspoon vanilla extract
  • 1 1/2 cups half and half
  • 1 cup chopped, roasted peaches,

Directions:

Add heavy whipping cream, honey and sugar to a sauce pan and heat over low heat, stirring constantly just until honey and sugar are dissolved.  Do not bring to a boil.

Remove from heat and pour into a mixing bowl.

Whisk in vanilla and half and half.  Cover and refrigerated 1 hour.

Stir in roasted peaches and pour into ice cream freezer and follow manufacturer’s directions.  Serve immediately or store in an airtight container and freeze.

Roasted Peaches

Ingredients:

  • 4 peaches, peeled and sliced
  • 2 tablespoons sugar

Directions:

Toss peaches with sugar and place on a foil lined baking sheet that has been sprayed with non-stick cooking spray.

Bake at 375°F for 30 minutes.  Store in an airtight container until you are ready to make ice cream.
