Green & Black’s Chocolate Toffee Iced Cupcakes
Busy, busy, busy, that seems to be the theme of our summer. We took a little time on Sunday and went up on the mountain to trout fish. It was just what we needed. The air is so cool and crisp and the spot we chose had wild mint growing everywhere, it smelled so good. We all caught a trout or two and really enjoyed the day. I did come away a little sunburned but all in all it was a very nice day.
Waiting for us when we got home were these sweet little cupcakes. I used a box mix to save a little time, you could use your favorite from scratch recipe or even a chocolate mix. You really can’t go wrong because the icing is out of this world amazing.
I made the icing with Green & Black’s Chocolate Toffee Bar chopped up inside. The toffee bits add a great little crunch to the creamy icing and everyone loved them. Green & Black’s Chocolate is so rich and creamy and delicious that I always struggle not to just hide it and eat it all myself.

Green & Black’s Chocolate Toffee Iced Cupcakes
Ingredients:
for cupcakes:
- 1 15.25 oz yellow cake mix
- 4 eggs
- 1/2 cup melted butter
- 1 cup whole milk
for icing:
- 1/2 cup butter, softened
- 1 7 oz jar marshmallow creme
- 2 cups powdered sugar
- 3/4 cup cocoa powder
- 1/4 cup milk
- 1 3.5 oz Green & Black’s Toffee Bar, coarsely chopped
Cooking Directions:
Preheat oven to 350°F.
for cupcakes:
In a large mixing bowl add cake mix, eggs, melted butter and milk and beat with an electric mixer at low speed until ingredients come together, raise speed to medium and beat for 2 minutes or until smooth.
Pour cake batter into greased or lined cupcake tins. Bake for 18-22 minutes or until a wooden pick inserted comes out clean.
Remove cupcakes to a wire rack to completely cool.
for icing:
Place softened butter and marshmallow creme in bowl of electric mixer and beat at medium-high speed until creamed.
Add powdered sugar and cocoa powder to a small bowl and whisk together.
Add cocoa and powdered sugar and milk alternately with the mixer on medium speed until all ingredients are combined and icing is fluffy.
Fold chopped Chocolate Toffee bar into icing.
Spread onto cooled cupcakes.
Enjoy!

I am a fan of dark chocolate so I would have to say the 70% cocoa variety. After a nice meal I usually chip off a small piece (dark chocolate seems to satisfy more in less quantities) and let it melt in my mouth. Great after an italian dish or homemade pizza!

There are four or five that I would love to try but I think that I would want to try the Peanut & Sea Salt. That one or the Mint or Maya Gold. I did notice that they also have Hot Chocolate that I love when its cold outside.
