My older boys are gone to football camp this week and it has been strangely quiet. I’ve also had trouble cooking for three instead of five. You will notice five little bowls of dessert here and there was only three of us. I may have eaten more than one but I promise it was not more than two. I have some restraint, just not much.
This is an ideal summer treat. It is super quick and doesn’t require the use of the oven. The taste is totally creamy and delicious and I know you will want to eat them all.
I am sharing this wonderful Toasted Coconut Mousse over at Cooking With Books. I’m sure y’all know Nelly, she’s one of my good buddies from Virtual Potluck and she’s the sweetest pastry chef I know. Head on over and get the recipe and leave some comment love. I would appreciate it and while you are there, take a look around she has some delightful food to share with you.

I really love the lightness and freshness of mousses! Is that a word–mousses? Anyway, this recipe looks great, and I might eat two of them myself. I also have some restraint. Some. Sometimes.

It looks amazing Miss! I may have had more than one also. It’s hard to reduce the number of servings when you are so used to feeding so many…especially boys!
