Pepper-Jack Cornmeal Biscuit Bites

The summer work on the ranch is in full swing.  Gathering cattle, branding, fence fixing and hay baling is starting  in the next day or two.  My older boys and my nephew are putting in some long hours and working really hard.  My job is to kept them fed and hydrated.

When they come in for lunch they are starving.  Sometimes I don’t quite have it ready so I’ve been trying to get a few things baked for them to snack on.  I had a chunk of Wisconsin pepper-jack in the fridge and thought some bite sized cheese biscuits would be ideal for them to snack on while I finish up lunch.

Turned out perfectly and with a glass of strawberry-lemonade it was a pretty good afternoon snack. The boys loved them and the pepper-jack cheese gave them just a little spicy kick.

Pepper-Jack Cornmeal Biscuit Bites

Ingredients:

  • 1 1/3 cups all purpose flour
  • 1/2 cup cornmeal
  • 1 tablespoon sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated garlic
  • 1/2 cup softened butter
  • 1 cup Wisconsin Pepper-Jack cheese
  • 1 cup buttermilk

Cooking Directions:

Preheat oven to 375° F.

In a large mixing bowl add all dry ingredients and whisk together.  Cut in butter until crumbly, stir in cheese.  Add buttermilk and stir until all combined.

Scoop with a medium size cookie scoop (or rounded spoonful) about 2 inches apart onto a greased or lined cookie sheet.

Bake for 15-17 minutes or until lightly browned.

Serve warm or at room temperature.

Pepper jack is one of my favorite cheeses to eat, love the kick! These look so scrumptious, I’d put in a couple of hours of work for a plate :)
