HELLO WEEKEND! HELLO SUMMER!  Wahoo the kids are out of school!  This last week (and it wasn’t even a full week) of school has had me busier than a you-know-what.

I am really looking forward to this summer, it will be busy but that is a good thing.  I really hope to have a barbecue or two this summer and with barbecues come great food and great drinks.

When I have a cookout I like to have the old fashioned root beer & orange cokes for the kids and sometimes I make this super easy punch.  The guys seem to prefer beer and I usually throw in some of the Mike’s Hard Lemonades.  I really like the cranberry or the pomegranate but the pomegranate is hard for me to find.

I decided to step out of my normal cocktail routine and try something new.  I stood in the kitchen looking at what I had to work with, a bottle of wine and a bottle of Scotch.  I did a little internet research on drinks made with Scotch.  What I found was that true lovers of Scotch seem to view it sinful to make cocktails instead of drinking it straight.  I prove this later as I have my husband taste my fruity concoction.

On occasion, I take a sip of Scotch but I can’t say that it is something I ever like.  I decided to try a Scotch whiskey sour made a little sweeter with some pomegranate juice.

Results: I loved it.  I was actually surprised how much I liked it.  I’m pretty sure I had never had a whiskey sour before.  It really reminded me of the hard lemonades that I love to drink (even though I think they are made from malt liquor).  My husband thought I had totally ruined the Scotch. Theory proven.

The POM Whiskey Sour has the same tart-sweet combination that I love in margaritas.  It was super simple to make, which is good because I tend to shy away from cocktails that have 12 steps or require simple syrups or 15 ingredients.  I am kind of lazy that way. The only thing missing was a tiny umbrella!

POM Whiskey Sours

Yield: 2 cocktails

Ingredients:

  • ice
  • 1  whole lemon, plus additional slices for garnish
  • 2 teaspoons sugar
  • 2 tablespoons POM pomegranate juice
  • 2 shots Scotch whiskey
  • 12 oz Sprite or club soda

Directions:

Add ice cubes to two old fashioned glasses.

Cut lemon and half, juice each half and pour into glasses.

Add 1 teaspoon sugar, 1 tablespoon POM juice, and one shot of Scotch to each glass.  Top with Sprite or club soda, stirring well.

Garnish with lemon slices.

Enjoy!

Okay, so now I want to try this with amaretto, because an amaretto sour is probably my favorite drink ever.
