Maple-Walnut Apple Cake

Pure Maple Syrup has become one of my very favorite flavors.  I grew up not really liking pancake syrup or Maple frosted donuts and thinking that I didn’t like Maple.  A few years back my husband and I had to travel half-way across the country to attend an important business meeting.  The meeting took place in Nashville in a giant hotel with valet parking.

We are not accustomed to big city living or valet parking.  My husband laughs that I walked into the fancy hotel with my Walmart sacks for luggage.  Well it wasn’t quite that bad, but maybe close.  We don’t travel much and I don’t exactly have the Louis Vuitton luggage like the Real Housewives.

We were a little intimidated and nervous about our early morning meeting and we ordered room service for breakfast.  I ordered French toast and it came with the cutest little bottles of real Maple syrup, it was the first time I had ever tried it.  Our meeting was a great success and well worth the trip and I came away hooked on real Maple syrup.  I even brought home a couple of the tiny bottles for the kids to try.

Coombs Family Farms provides the best quality Maple Syrup, Maple Sugar and Maple Candies, all organic.  Maple syrup is perfect for baked goods like this wonderfully delicious cake.  It is also great in savory dishes.  I also used this syrup mixed with a little soy sauce, sesame oil, garlic and ginger for a salmon glaze.  It was divine!

Maple-Walnut Apple Cake

Ingredients:

  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup Coombs Family Farms Pure Maple Syrup, divided use
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 cups apples, peeled, cored and coarsely chopped
  • 1 cup toasted walnuts, chopped

Cooking Directions:
Preheat oven to 350 degrees F°.

Grease a 9 x 9 inch baking pan.

In a large mixer bowl, add butter creaming with electric mixer.  Add brown sugar, sugar and 1/4 cup of maple syrup mixing until combined.  Beat in vanilla and egg.  Add flour and baking soda mixing just until combined.  Fold in apples.

Pour into greased baking pan.

Sprinkle toasted walnuts over batter, pressing lightly.  Drizzle with remaining 1/4 cup maple syrup.

Bake for 35 minutes or until a toothpick inserted comes out clean.

Cool for 10 minutes before slicing.  Serve warm or at room temperature.

Growing up we may have called it maple syrup but it was Log Cabin and it worked but I was in my late 20′s before I tried the real deal and I’ve been hooked ever since; so I could relate to your story so well!

This looks like the perfect breakfast treats. YUM!
