Buffalo Andouille Stuffed Mushrooms

The Buffalo Guys offered the Virtual Potluck gang a chance to try their Gourmet Buffalo Sausages.  We received a package of Hot Dogs, Brats, Polish Sausages, and Andouille Sausage.  The sausages were all pre-cooked and just had to be reheated.

The sausages arrived frozen, so I put them in the fridge. A few days later, I found myself needing something quick for supper.  Buffalo Hot Dogs, what could be quicker?  Let me say that I am not much of a hot dog eater, in fact I have been known to go hungry rather than eat a hot dog.  Well I didn’t have any hot dog buns.  Hmm, what to do?  I decided to make  a quick yeast dough that I rolled thin, cut into strips and wrapped around the hot dogs.  Gourmet pigs in a blanket.  I loved them and so did the rest of the family!  There wasn’t time for any picture taking and there sure weren’t any leftovers!  Come to find out, I love Buffalo Hot Dogs!  There’s no  MSG, Nitrites, fillers or other chemicals.  In 2004, Bon Appetite Magazine listed this hot dog in their “Taste Test – Top Dogs” as “The Fit Frank”.

Next we had the Polish Sausages, just simmered and served with a little barbecue sauce and some fried potatoes.  Super delicious, also no fillers, MSG, nitrites or chemicals.

I had never tried Andouille, and my sister-in-law suggested stuffed mushrooms, it turned out to be a REALLY good idea!  I could have doubled or tripled the recipe because we totally fought over them, down to the last one!  They were so good.  I only used one of the sausages for the  stuffed mushrooms. With 5 left, I decided a batch of red beans and rice was in order.  Also fantastic!  I figure you don’t need a recipe for red beans and rice, but if you’ve never made it, let me know and I will give you a run down.  Also all natural, no chemicals, MSG, nitrites or fillers in the Andouille.

I haven’t tried the Brats yet, but I am assured they will be every bit as delicious as the rest of these quality, gourmet Buffalo sausages.

Since bison meat has very little intramuscular fat it scores favorably lower on cholesterol, fat and saturated fat when compared to beef, pork, skinless breast of chicken and even most fish.

Buffalo Andouille Stuffed Mushrooms

Ingredients:

  • 2 teaspoons olive oil
  • 1/4 cup onion, diced
  • 1 tablespoon celery, diced
  • 1/2 teaspoon salt
  • 2 oz Buffalo Andouille Sausage (1 link), diced
  • 8 oz mushrooms (white or baby bellas), cleaned
  • 1/4 cup Parmesan cheese, finely grated
  • 4 Ritz crackers

Cooking Directions:

Preheat oven to 375 degrees F.

Heat olive oil in a small skillet, add onions, celery and salt.  Cook over medium heat for about 2 minutes, until onions start to soften.  Add Andouille and continue to cook 2 – 3 minutes.  Remove from heat and set aside.

Remove stems from mushrooms.  Spray a small baking dish with non-stick spray.  Spoon filling into each mushroom and place into baking dish.

In a small bowl, crush crackers and add Parmesan cheese, stir together.  Sprinkle over mushrooms.

Bake for 20 minutes.

Remove from oven and place on a serving platter.

Enjoy!

I love stuffed mushrooms! I think I will make these tonight when I get home from our trip! It never crossed my mind, but now the idea is stuck there! Must have …stuffed mushrooms! :) Thanks!
