Cheddar Cheese Soup with Chicken & Peppers

The One-Pot Blogger Cooking Party continues with Cheddar Cheese Soup with Chicken & Peppers from the Sizzling Skillets and Other One-Pot Wonders cookbook from Morrow Cookbooks.  One thing you can say for sure about Emeril’s recipes, they are so flavorful.  It is well worth the time and effort to prepare dishes like this one.  The flavors develop as it cooks and the end result is much like I would expect from a nice restaurant.

On Sunday I was asked to help judge a pie contest  for our community Fall Festival.  It was a challenge to eat all of that pie, but I handle it okay.  Just kidding it was really fun.  It was a little before lunch so I skipped breakfast and after tasting so many pies, I really didn’t want any lunch.  So by the time supper rolled around this was perfect, it was filling and delicious and completely satisfying.

Cheddar Cheese Soup with Chicken & Peppers is filled with poblano peppers, red peppers, jalapeno, onions, chicken, potatoes, and the rich broth is finished off with cheddar cheese which balances out the spicy peppers.  Y’all know I can’t handle the heat, so believe me when I say, you get lots of flavor but not too much heat. I garnished it with a few fried tortilla strips and fresh cilantro.

6160878740 2b18b80af4 z Cheddar Cheese Soup with Chicken & Peppers: One Pot WondersI will definitely make this again, I really loved it.  This kind of hearty soup is perfect for fall and those coming winter days when we are out feeding the cows.  When we get chilled to the bone, it is this kind of meal that really warm us up and leaves us feeling good.

This looks great! My hubby isn’t a cheese fan so I probably won’t be making this one. Maybe I’ll make a super small batch on an evening when he isn’t home.

Love how you plated this. I can taste a nice, rich chicken tortilla soup when I look at your photo. But the real question is – who won the pie contest? :)

Love this kind of soup. I love heat but Rachel does not, so I’m glad this isn’t too hot. I can always make mine tear inducing after pouring for myself ;)
