Santa Fe Roasted Red Pepper Dip

Football season is upon us, and game day food is a must.  I have a super quick dip for you that will knock your socks off.  Roasted red peppers with cumin and a hint of cilantro for a new twist on the classic Tex-Mex dip flavors.  This would also be a great addition to tacos and I’m thinking of trying it with grilled chicken.  Many possibilities!

I am still running in circles, but I have some exciting things coming up in the next few weeks along with some great giveaways!

I was chosen to be part of Emeril’s One-Pot Blogger Cooking Party to to celebrate the release of Emeril Lagasse’s upcoming book Sizzling Skillets and Other One-Pot Wonders.SizzlingSkillets jacket cover Hi Res 229x300 Santa Fe Roasted Red Pepper Dip

Check out the other participants here, and be looking forward to some awesome food!  In the meantime here’s a recipe from my kitchen that I know you will enjoy!

Santa Fe Roasted Red Pepper Dip

Ingredients:

1/2 cup mayonnaise

1/2 cup sour cream

1/2 cup roasted red pepper

1/4 cup cilantro

1 tablespoon diced  green onion (white parts only, save green parts for a garnish)

1 teaspoon fresh lemon juice

Dash hot sauce

1/2 teaspoon granulated garlic

1 teaspoon ground cumin

1/2 teaspoon salt

Directions:

Add all ingredients into a food processor or blender and process for 30 seconds, remove lid and scrape down sides.  Continue to process for 1 minute.  Pour into serving bowl, garnish with green onion tops.  Cover and refrigerate for at least 30 minutes for flavors to meld.  Serve with tortilla chips, tacos, or burritos.

Enjoy!

Oh my…so simple yet so delicious. Can’t wait to make this for game days. (my hubby watches soccer instead of football though) :P But I’m sure he’ll love this no matter what he’s watching.
